Uncooked rice, when stored properly (so water or other contaminants can ‘t reach it) will pretty much keep indefinitely. Storing it properly isn’t difficult by any means, so in almost all cases you can keep uncooked rice for years.

Your cooked rice might be spoiled if it has an unpleasant smell. An off smell is a clear sign the food is spoiled and you should discard it immediately. Another clue rice is spoiled is if the grains are hard and dry. Leftover rice that is crunchy or dry when reheated should not be consumed.
The best temperature to store grains, including rice, is 40°F or below; however, rice stored at a constant 70° F with oxygen absorbers will store well for up to 10 years. In cooler storage areas rice sealed in oxygen-free containers can be stored for up to 30 years.
The NHS says that leftover rice can be bad for you. Uncooked rice can contain spores that can survive when the rice is cooked. If the rice stands at room temperature for too long, those spores turn into bacteria. That in turn can cause food poisoning.
White rice is fine in the pantry for a few years, but brown rice and wild rice can become oily and smell off in as little as six months.
White rice or “ polished” rice is the most common form of rice. The outer husk is removed, and the layers of bran are milled until the grain is white. White rice can last many years, because the bran and germ are not intact. It is the least expensive and with proper storage will last up to 30 years.

Uncooked white rice should be stored in a tightly closed container. If moisture is kept out, the maximum storage time for good flavor is one year. Rice will keep up to two years, however the quality will not be as good. Cooked rice can be stored for one week in the refrigerator.
If rice is left standing at room temperature, the spores can grow into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. The longer cooked rice is left at room temperature, the more likely it is that the bacteria or toxins could make the rice unsafe to eat.
If you use too much water, the grains can become mushy, and too little water can re-harden the rice, causing it to stick to the bottom of the pan. The same amount of water will boil off each time, so subtract the amount of rice from the amount of water in your original perfect batch.
Uncooked rice contains bacteria called Bacillus Cereus that is highly resistant to cooking procedures. When the rice is cooked, the spores can survive; but if the rice is then left standing at room temperature, the spores will multiply and may cause vomiting or diarrhoea. Reheating the rice will only make it worse.”
It is safe to eat the rice cold as long as it has been cooled and stored correctly. Do not leave reheated rice sitting on the counter. Following these steps will reduce the risk of food poisoning. Do not reheat the rice more than once as this further increase the risk of food poisoning.
The cooling process can quickly be done by spreading the rice on a sheet pan at room temperature, or chill in the refrigerator for 5 to 10 minutes if you’re impatient like me. The rice should be cool to the touch before adding it to the pan.
